Ingredients:
- 1 cup fresh spinach, finely chopped
- 1 cup Parmesan cheese, freshly grated
- 0.5 cup low-moisture Mozzarella cheese, shredded
- 1 tbsp cream cheese, softened
- 0.5 tsp garlic powder
- 0.25 tsp onion powder
- 0.125 tsp red pepper flakes
- 1 pinch sea salt
Instructions:
- Preheat your oven to 400°F (200°C) and line a large baking sheet with a silicone mat or parchment paper.
- Place the chopped spinach in a clean tea towel and wring it out aggressively over the sink until it is bone-dry and no more liquid escapes.
- In a medium mixing bowl, combine the dehydrated spinach, grated Parmesan, shredded Mozzarella, softened cream cheese, garlic powder, onion powder, red pepper flakes, and salt.
- Use a fork to mash the ingredients together until the mixture forms coarse, uniform green-flecked crumbs.
- Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them 2 inches apart. Flatten slightly with the back of the spoon.
- Bake for 8 minutes until the edges are a deep mahogany color and the centers have stopped bubbling.
- Remove from the oven and allow to cool on the tray for 5 minutes before transferring to a wire cooling rack to reach maximum crispness.
