Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 5 tbsp (70g) unsalted butter
  • 4 tbsp (60ml) soy sauce
  • 1 tsp (5g) garlic powder
  • 4 cups (600g) cooked long-grain white rice, chilled overnight
  • 2 tbsp (30ml) vegetable oil
  • 1 cup (150g) frozen peas and carrots, thawed
  • 1/2 cup (75g) white onion, finely diced
  • 3 large eggs, lightly beaten
  • 3 stalks (60g) green onions, sliced
  • 1 tbsp (15ml) oyster sauce
  • 1 tsp (5ml) toasted sesame oil
  • 1/2 tsp (2.5g) granulated sugar

Instructions:

  1. Whisk together 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, and 1/2 tsp sugar in a small bowl. Break up the chilled rice by hand to remove any large clumps.
  2. Heat 2 tbsp of butter in a wok or large cast iron skillet over medium-high heat until foaming. Add shrimp in a single layer and sear for 2 minutes per side until opaque and golden. Stir in 1 tbsp soy sauce and 1 tsp garlic powder, then immediately remove shrimp to a plate.
  3. Add the remaining 3 tbsp butter and 2 tbsp vegetable oil to the same pan. Sauté diced onions, frozen peas, and carrots until onions are translucent. Push vegetables to the side and scramble the beaten eggs until just set.
  4. Add the chilled rice to the pan and stir-fry on high heat, tossing constantly to sear the grains. Pour in the prepared signature sauce and toss until the rice is evenly coated and mahogany-colored.
  5. Fold the seared shrimp and sliced green onions back into the rice. Toss for 1 minute to reheat through and serve immediately.
