Ingredients:

  • 3 large red onions (approx. 2 lbs), peeled and sliced into 1/2-inch thick rounds
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup balsamic vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp garlic powder

Instructions:

  1. Whisk together the olive oil, salt, and pepper in a large bowl. Toss the onion rounds gently until every slice is glistening and evenly coated.
  2. Preheat your grill to medium-high (approx. 400°F / 200°C). Place the onions directly on the grates or in a grill basket. Grill for 5–7 minutes per side until deep, dark grill marks appear and the onions release easily from the grate.
  3. While the onions are grilling, whisk the balsamic vinegar, maple syrup, and garlic powder in a small bowl. During the last 2 minutes of cooking, brush the glaze generously onto both sides of the onions until it bubbles and thickens into a mahogany-colored lacquer.
