Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp granulated sugar
  • ½ tsp salt
  • 2 large eggs
  • 1 ½ cups whole milk
  • ½ cup unsalted butter, melted and cooled slightly
  • 1 tsp vanilla extract

Instructions:

  1. In a medium mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. In a second mixing bowl, beat the eggs, then stir in the milk, melted butter, and vanilla extract.
  3. Pour the wet mixture into the dry mixture and stir with a spatula just until the flour streaks disappear; do not overmix.
  4. Preheat your waffle iron until the indicator light signals it is ready and lightly grease the plates with cooking spray or melted butter.
  5. Pour about ½ cup of batter onto the center of the iron, close the lid, and cook until the steam stops escaping the sides and the waffle is a deep mahogany-gold.
  6. Carefully remove the waffle with a fork or tongs and place it on a wire cooling rack for 30 seconds to maintain crispness.
