Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (180ml) warm water
  • 1 tbsp (15ml) vegetable oil
  • 2 cups (480ml) neutral oil

Instructions:

  1. Whisk together the flour, baking powder, and salt in a large bowl. Create a well in the center and pour in the warm water and oil.
  2. Stir with a spoon until a shaggy dough forms. Gently knead by hand for only 1-2 minutes until the dough holds together.
  3. Cover the dough and let it rest for 10 minutes to relax the gluten.
  4. Divide the dough into 6 equal portions. On a floured surface, gently pat each ball into a circle about ½ inch thick using your fingertips.
  5. Heat the neutral oil in a skillet over medium-high heat until it reaches 350°F (175°C).
  6. Carefully slide in one piece of dough and fry for 2-3 minutes per side until mahogany-colored and puffed. Drain on paper towels.
