Ingredients:

  • 3 large Honeycrisp or Granny Smith apples (approx. 1 lb / 450g)
  • 1 tbsp lemon juice
  • 1/2 cup natural creamy peanut butter (unsweetened)
  • 1/2 cup dark chocolate chips (70% cocoa or higher)
  • 1 tsp coconut oil
  • 2 tbsp low-sugar granola
  • 1 tbsp sliced almonds or shredded coconut

Instructions:

  1. Slice apples into 1/4 inch thick rounds. Use a corer or small round cutter to remove the center, creating rings. Toss rings in lemon juice and blot the top of each slice with a paper towel until completely dry. Arrange on a parchment-lined baking sheet.
  2. Spoon 1 tablespoon of peanut butter onto the center of each ring and spread it in a smooth layer, leaving a small margin around the edge. Sprinkle with granola and press lightly to adhere if desired.
  3. Combine dark chocolate chips and coconut oil in a microwave-safe glass bowl. Microwave in 30-second increments, stirring until smooth and glossy.
  4. Drizzle the chocolate over the peanut butter in a zig-zag pattern or dip the rings entirely. Immediately top with sliced almonds or shredded coconut.
  5. Place the tray in the refrigerator for 30 minutes until the chocolate is firm.
