Ingredients:

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 12 oz thick-cut corn tortilla chips
  • 2 cups shredded sharp Cheddar or Monterey Jack cheese
  • 1/2 cup diced red onion
  • 1/4 cup sliced pickled jalapeños
  • 1/2 cup diced fresh cilantro
  • 1 medium tomato, diced

Instructions:

  1. Cook the ground beef in a skillet over medium-high heat until browned. Stir in the taco seasoning and water, simmering until the liquid has reduced to a thick glaze. Allow the beef to cool completely and store in a sealed bag.
  2. Place a cast iron skillet over a campfire grill or hot coals. Create a foundation by spreading half of the tortilla chips across the bottom.
  3. Layer one-third of the pre-cooked beef and one-third of the cheese over the chips. Repeat the process with the remaining chips, beef, and cheese, finishing with a final layer of cheese, diced red onion, and pickled jalapeños on top.
  4. Cover the skillet with aluminum foil to trap heat. Heat until the cheese is bubbling and molten (approximately 5–10 minutes).
  5. Remove from heat and top with fresh cilantro and diced tomatoes immediately before serving.
