Ingredients:
- 3 large Granny Smith or Honeycrisp apples, peeled and diced (approx. 450g)
- 1 tsp lemon juice
- 2 cups all-purpose flour (250g)
- 1 cup organic brown sugar (200g)
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 0.5 tsp ground ginger
- 0.25 tsp ground nutmeg
- 0.5 tsp sea salt
- 0.5 cup neutral oil such as grapeseed or coconut oil (120ml)
- 0.5 cup unsweetened applesauce (125g)
- 1 tsp vanilla bean paste
- 1 tbsp apple cider vinegar
Instructions:
- Heat the oven. Set your rack to the middle position and preheat to 180°C. Grease your 9 inch pan with a little oil.
- Peel and dice your apples into 1cm cubes, then toss them in a bowl with the lemon juice until coated and bright.
- Whisk dry goods. In a large bowl, combine the flour, baking soda, baking powder, salt, and spices.
- Emulsify wet base. In a separate medium bowl, whisk the brown sugar, oil, applesauce, vanilla, and vinegar until the sugar has mostly dissolved and the mix looks glossy.
- Combine carefully. Pour the wet ingredients into the dry. Use a spatula to fold them together just until the last streaks of flour vanish.
- Fold in apples. Gently stir in the diced apples, making sure they are distributed throughout the thick batter.
- Transfer to pan. Scrape the batter into your prepared pan and smooth the top with your spatula.
- Bake for 45 minutes. Place in the oven and bake until the top is golden brown and a toothpick comes out clean.
- Cool properly. Let the cake rest in the pan for 10 minutes, then move it to a wire rack.
