Ingredients:

  • 3 large Granny Smith or Honeycrisp apples, peeled and diced (approx. 450g)
  • 1 tsp lemon juice
  • 2 cups all-purpose flour (250g)
  • 1 cup organic brown sugar (200g)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.5 tsp sea salt
  • 0.5 cup neutral oil such as grapeseed or coconut oil (120ml)
  • 0.5 cup unsweetened applesauce (125g)
  • 1 tsp vanilla bean paste
  • 1 tbsp apple cider vinegar

Instructions:

  1. Heat the oven. Set your rack to the middle position and preheat to 180°C. Grease your 9 inch pan with a little oil.
  2. Peel and dice your apples into 1cm cubes, then toss them in a bowl with the lemon juice until coated and bright.
  3. Whisk dry goods. In a large bowl, combine the flour, baking soda, baking powder, salt, and spices.
  4. Emulsify wet base. In a separate medium bowl, whisk the brown sugar, oil, applesauce, vanilla, and vinegar until the sugar has mostly dissolved and the mix looks glossy.
  5. Combine carefully. Pour the wet ingredients into the dry. Use a spatula to fold them together just until the last streaks of flour vanish.
  6. Fold in apples. Gently stir in the diced apples, making sure they are distributed throughout the thick batter.
  7. Transfer to pan. Scrape the batter into your prepared pan and smooth the top with your spatula.
  8. Bake for 45 minutes. Place in the oven and bake until the top is golden brown and a toothpick comes out clean.
  9. Cool properly. Let the cake rest in the pan for 10 minutes, then move it to a wire rack.
