Ingredients:
- 1 tbsp Toasted sesame oil
- 2 cloves Garlic, minced
- 1 tbsp Fresh ginger, grated
- 4 cups Low-sodium chicken broth
- 2 tbsp Low-sodium soy sauce
- 1 tsp Rice vinegar
- 10 Frozen pork dumplings
- 180g High-quality ramen noodles
- 2 Large eggs
- 2 cups Fresh baby spinach
- 2 Green onions, thinly sliced
Instructions:
- Boil the water. Bring a small pot of water to a rolling boil over high heat. Note: Using enough water to fully submerge the eggs ensures even cooking.
- Cook the eggs. Carefully lower the 2 large eggs into the water and boil for exactly 6 minutes and 30 seconds. Use a timer for accuracy.
- Shock and peel. Immediately transfer the eggs to an ice bath. Let them cool completely before peeling and setting aside.
- Sauté aromatics. In your main stockpot, heat the 1 tbsp toasted sesame oil over medium heat. Add the minced garlic, 1 tbsp grated ginger, and the white parts of the sliced green onions. Cook for 1-2 minutes until the kitchen smells incredible.
- Build the broth. Pour in the 4 cups chicken broth, 2 tbsp soy sauce, and 1 tsp rice vinegar. Bring the mixture to a gentle, bubbling simmer.
- Simmer the dumplings. Drop the 10 frozen dumplings into the broth. Cook for 3-5 minutes until they float to the surface.
- Cook the noodles. Add the 180g ramen noodles to the pot. Simmer for 2-3 minutes until they are tender but still have a slight bite.
- Wilt the spinach. Stir in the 2 cups baby spinach during the final 30 seconds of cooking until it turns a vibrant, dark green.
- Assemble and serve. Divide the noodles and dumplings into two bowls. Pour the broth over them.
- Final garnish. Slice the soft boiled eggs in half and place them on top. Scatter the green onion tops over everything.
