Ingredients:
- 1 lb English Cucumber, thinly sliced
- 3 oz Red Onion, thinly shaved
- 1 tsp Kosher salt
- 1/2 cup Apple Cider Vinegar
- 1/4 cup Water
- 2 tbsp Cane sugar
- 1 tsp Salt
- 1/2 tsp Black peppercorns
- 1/2 tsp Celery seeds
Instructions:
- Use a mandoline or sharp knife to slice the cucumber into rounds approximately 1/8 inch (3mm) thick and thinly shave the red onion.
- Toss the cucumbers and onions with 1 tsp of salt in a colander and let them sit for 10–15 minutes to draw out excess water.
- Rinse the vegetables quickly under cold water to remove excess salt and pat dry with a paper towel.
- In a small saucepan, combine apple cider vinegar, water, sugar, salt, peppercorns, and celery seeds.
- Heat over medium until the liquid simmers and the sugar and salt are completely dissolved.
- Remove from heat and let the brine cool for 5 minutes.
- Place the prepared vegetables into a glass bowl or jar and pour the warm brine over them until fully covered.
- Stir gently and refrigerate for 30 minutes before serving.
