Ingredients:

  • 1 lb English Cucumber, thinly sliced
  • 3 oz Red Onion, thinly shaved
  • 1 tsp Kosher salt
  • 1/2 cup Apple Cider Vinegar
  • 1/4 cup Water
  • 2 tbsp Cane sugar
  • 1 tsp Salt
  • 1/2 tsp Black peppercorns
  • 1/2 tsp Celery seeds

Instructions:

  1. Use a mandoline or sharp knife to slice the cucumber into rounds approximately 1/8 inch (3mm) thick and thinly shave the red onion.
  2. Toss the cucumbers and onions with 1 tsp of salt in a colander and let them sit for 10–15 minutes to draw out excess water.
  3. Rinse the vegetables quickly under cold water to remove excess salt and pat dry with a paper towel.
  4. In a small saucepan, combine apple cider vinegar, water, sugar, salt, peppercorns, and celery seeds.
  5. Heat over medium until the liquid simmers and the sugar and salt are completely dissolved.
  6. Remove from heat and let the brine cool for 5 minutes.
  7. Place the prepared vegetables into a glass bowl or jar and pour the warm brine over them until fully covered.
  8. Stir gently and refrigerate for 30 minutes before serving.
