Ingredients:
- 2 cups (200g) oat flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 2 tsp (6g) pumpkin pie spice
- 1/2 tsp (3g) sea salt
- 1 cup (245g) pumpkin puree
- 1/2 cup (120ml) maple syrup
- 2 large (110g) eggs
- 1/3 cup (80ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease the cups thoroughly with coconut oil.
- In a medium bowl, whisk together the oat flour, baking soda, baking powder, pumpkin pie spice, and salt.
- In a large bowl, combine the pumpkin puree, maple syrup, eggs, melted oil, and vanilla extract. Whisk vigorously until the mixture is smooth.
- Gently fold the dry ingredients into the wet mixture using a silicone spatula until no streaks of flour remain. Let the batter rest for 5 minutes to allow the oats to hydrate.
- Distribute the batter evenly among the 12 muffin cups, filling each about 3/4 full. Bake for 18–22 minutes until golden and a toothpick comes out clean.
