Ingredients:

  • 2 cups (200g) oat flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 2 tsp (6g) pumpkin pie spice
  • 1/2 tsp (3g) sea salt
  • 1 cup (245g) pumpkin puree
  • 1/2 cup (120ml) maple syrup
  • 2 large (110g) eggs
  • 1/3 cup (80ml) melted coconut oil
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease the cups thoroughly with coconut oil.
  2. In a medium bowl, whisk together the oat flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In a large bowl, combine the pumpkin puree, maple syrup, eggs, melted oil, and vanilla extract. Whisk vigorously until the mixture is smooth.
  4. Gently fold the dry ingredients into the wet mixture using a silicone spatula until no streaks of flour remain. Let the batter rest for 5 minutes to allow the oats to hydrate.
  5. Distribute the batter evenly among the 12 muffin cups, filling each about 3/4 full. Bake for 18–22 minutes until golden and a toothpick comes out clean.
