Ingredients:
- 1 3/4 cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- 1/4 tsp (1g) ground cloves
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) packed light brown sugar
- 2 large eggs
- 1 cup (245g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) salt
Instructions:
- In a medium bowl, beat the softened cream cheese and granulated sugar until the mixture is pale and completely smooth.
- Add the egg, vanilla, and salt to the cream cheese mixture, mixing on medium speed until fully incorporated and glossy.
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves in a large bowl until no clumps remain.
- In a separate bowl, combine the melted butter and brown sugar, whisking until smooth.
- Beat in the eggs one at a time, then stir in the pumpkin puree and vanilla extract until the batter is a deep, uniform orange.
- Gently fold the dry ingredients into the wet ingredients using a spatula. Stop the moment the flour streaks disappear.
- Preheat oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
- Divide the pumpkin batter evenly among the 12 lined muffin cups, filling them about 2/3 full.
- Spoon 1 generous tablespoon of the cream cheese mixture onto the center of each muffin and gently swirl with a toothpick or knife.
- Bake for 18-20 minutes until the edges are firm and a toothpick inserted into the pumpkin part comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
