Ingredients:

  • 8 oz (225g) full-fat cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 2 tsp (10g) ground cinnamon
  • 1 tsp (5g) pumpkin pie spice
  • 1 cup (245g) pumpkin puree
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. In a medium bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Whisk in the egg and vanilla extract until fully incorporated; the mixture should be a thick, glossy batter.
  3. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
  4. In a separate container, combine the pumpkin puree, brown sugar, oil, eggs, and vanilla.
  5. Pour the wet pumpkin mixture into the dry ingredients and gently fold with a spatula just until the flour streaks vanish.
  6. Preheat your oven to 375°F (190°C).
  7. Fill each muffin liner about 1/3 full with pumpkin batter.
  8. Place a generous tablespoon of the cream cheese filling directly in the center of each muffin.
  9. Top with the remaining pumpkin batter and bake for 20 minutes.
