Ingredients:
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 3/4 cups (220g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (10g) ground cinnamon
- 1 tsp (5g) pumpkin pie spice
- 1 cup (245g) pumpkin puree
- 1/2 cup (100g) packed light brown sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
Instructions:
- In a medium bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Whisk in the egg and vanilla extract until fully incorporated; the mixture should be a thick, glossy batter.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- In a separate container, combine the pumpkin puree, brown sugar, oil, eggs, and vanilla.
- Pour the wet pumpkin mixture into the dry ingredients and gently fold with a spatula just until the flour streaks vanish.
- Preheat your oven to 375°F (190°C).
- Fill each muffin liner about 1/3 full with pumpkin batter.
- Place a generous tablespoon of the cream cheese filling directly in the center of each muffin.
- Top with the remaining pumpkin batter and bake for 20 minutes.
