Ingredients:

  • 1 cup (245g) pumpkin puree
  • 2 large (220g) overripe bananas, mashed
  • 1 large (50g) egg
  • 1/3 cup (80ml) maple syrup
  • 1/4 cup (60ml) melted coconut oil
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) whole wheat flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground ginger
  • 1/4 tsp (0.5g) ground nutmeg
  • 1/2 tsp (3g) sea salt

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with parchment liners.
  2. In a large mixing bowl, mash the bananas until no large lumps remain.
  3. Whisk in the pumpkin puree, egg, maple syrup, melted oil, and vanilla until the mixture is uniform and velvety.
  4. Sift the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt directly into the wet ingredients.
  5. Using a silicone spatula, gently fold the dry ingredients into the wet batter until no streaks of flour remain. Do not over-mix.
  6. Divide the batter evenly among 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
