Ingredients:
- 1 cup (245g) pumpkin puree
- 2 large (220g) overripe bananas, mashed
- 1 large (50g) egg
- 1/3 cup (80ml) maple syrup
- 1/4 cup (60ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) whole wheat flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground nutmeg
- 1/2 tsp (3g) sea salt
Instructions:
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with parchment liners.
- In a large mixing bowl, mash the bananas until no large lumps remain.
- Whisk in the pumpkin puree, egg, maple syrup, melted oil, and vanilla until the mixture is uniform and velvety.
- Sift the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt directly into the wet ingredients.
- Using a silicone spatula, gently fold the dry ingredients into the wet batter until no streaks of flour remain. Do not over-mix.
- Divide the batter evenly among 12 muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes until the tops are golden-brown and a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
