Ingredients:
- 120g oat flour
- 60g vanilla protein powder
- 0.5 tsp baking soda
- 0.25 tsp sea salt
- 120g non-fat Greek yogurt
- 64g creamy almond butter
- 60ml pure maple syrup
- 1 tsp vanilla bean paste
- 90g dark chocolate chips (70% cacao)
- 1 tsp flaky sea salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking soda, and sea salt until no clumps remain.
- Create a well in the center of the dry ingredients and add the Greek yogurt, almond butter, maple syrup, and vanilla bean paste.
- Fold the mixture together with a silicone spatula until a thick, tacky dough forms. Ensure all protein powder is fully hydrated.
- Gently fold in the dark chocolate chips until evenly distributed throughout the dough.
- Using a 2-tablespoon cookie scoop, portion the dough into 12 balls and place them on the prepared baking sheet, leaving 2 inches of space between each.
- Press down slightly on each ball with the palm of your hand to flatten into a cookie shape, as these will not spread significantly during baking.
- Bake for 10 minutes. Remove from the oven while still soft and immediately top with a pinch of flaky sea salt.
