Ingredients:
- 1 cup (225g) cottage cheese, 4% milkfat
- 0.25 cup (60ml) marinara sauce, no-sugar-added
- 0.5 tsp Italian seasoning
- 0.25 tsp garlic powder
- 5.5 oz (156g) breaded chicken breast strips, pre-cooked
- 2 tbsp (15g) shredded mozzarella cheese, part-skim
- 1 tbsp (5g) grated parmesan cheese
- 3 leaves fresh basil, chiffonade
- 1 pinch red pepper flakes
Instructions:
- Heat the 156g of chicken strips in an air fryer at 200°C for 6 minutes until the coating begins to sizzle and darken.
- In a microwave safe bowl, stir together the 225g of cottage cheese, garlic powder, and Italian seasoning.
- Microwave the cheese mixture for 45 seconds until just warm to the touch but not boiling.
- Spoon the 60ml of marinara over the center of the warm cottage cheese.
- Slice the hot chicken strips into bite-sized chunks and nestle them into the marinara.
- Sprinkle the 15g of mozzarella and 5g of parmesan over the chicken and sauce.
- Microwave for another 30 to 45 seconds until the mozzarella is draped and gooey.
- Scatter the chiffonade of fresh basil and a pinch of red pepper flakes over the top.
