Ingredients:

  • 1 lb ground beef (80/20)
  • 0.5 lb ground pork
  • 0.5 cup panko breadcrumbs
  • 1 large egg
  • 0.5 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 0.25 cup fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried oregano
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 425°F (218°C) and line a rimmed baking sheet with parchment paper.
  2. Brush the parchment paper lightly with olive oil to prevent sticking.
  3. In a large bowl, combine the egg, panko, Parmesan, garlic, parsley, salt, pepper, and dried oregano. Stir these binders together first.
  4. Add the ground beef and ground pork to the bowl. Gently fold the meat into the binder mixture using your hands or a fork until just combined; do not over-mix.
  5. Form the mixture into golf-ball-sized spheres, approximately 2 tablespoons each, using dampened hands to stop the meat from sticking.
  6. Place meatballs on the baking sheet, leaving about one inch of space between each sphere for air circulation.
  7. Bake on the center rack for 15–20 minutes until they have a deep brown crust.
  8. Remove from the oven and let them rest for 5 minutes before serving.
