Ingredients:
- 1 lb ground beef (80/20)
- 0.5 lb ground pork
- 0.5 cup panko breadcrumbs
- 1 large egg
- 0.5 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 0.25 cup fresh parsley, chopped
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp dried oregano
- 2 tbsp olive oil
Instructions:
- Preheat the oven to 425°F (218°C) and line a rimmed baking sheet with parchment paper.
- Brush the parchment paper lightly with olive oil to prevent sticking.
- In a large bowl, combine the egg, panko, Parmesan, garlic, parsley, salt, pepper, and dried oregano. Stir these binders together first.
- Add the ground beef and ground pork to the bowl. Gently fold the meat into the binder mixture using your hands or a fork until just combined; do not over-mix.
- Form the mixture into golf-ball-sized spheres, approximately 2 tablespoons each, using dampened hands to stop the meat from sticking.
- Place meatballs on the baking sheet, leaving about one inch of space between each sphere for air circulation.
- Bake on the center rack for 15–20 minutes until they have a deep brown crust.
- Remove from the oven and let them rest for 5 minutes before serving.
