Ingredients:

  • 3 large Honeycrisp or Granny Smith apples (approx. 1 lb / 450g)
  • 1 tbsp fresh lemon juice
  • 1/2 cup almond butter or sunflower seed butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of fine sea salt
  • 2 tbsp coconut sugar or granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. Lay the apples on their side and cut horizontally into 1/2-inch (1.3cm) thick rounds.
  2. Use a circular cutter or corer to remove the center of each slice, creating a donut shape.
  3. Lightly brush the cut surfaces of the apple rings with lemon juice to prevent browning.
  4. In a small bowl, whisk together the nut butter, maple syrup, vanilla, and salt until the mixture reaches a velvety, spreadable consistency.
  5. Using a spoon or butter knife, spread a generous layer of glaze over the top of each apple ring.
  6. Immediately sprinkle the cinnamon-sugar mixture over the glaze, gently pressing the sugar into the glaze with fingertips to ensure it adheres.
