Ingredients:
- 3 large Honeycrisp or Granny Smith apples (approx. 1 lb / 450g)
- 1 tbsp fresh lemon juice
- 1/2 cup almond butter or sunflower seed butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of fine sea salt
- 2 tbsp coconut sugar or granulated sugar
- 1 tsp ground cinnamon
Instructions:
- Lay the apples on their side and cut horizontally into 1/2-inch (1.3cm) thick rounds.
- Use a circular cutter or corer to remove the center of each slice, creating a donut shape.
- Lightly brush the cut surfaces of the apple rings with lemon juice to prevent browning.
- In a small bowl, whisk together the nut butter, maple syrup, vanilla, and salt until the mixture reaches a velvety, spreadable consistency.
- Using a spoon or butter knife, spread a generous layer of glaze over the top of each apple ring.
- Immediately sprinkle the cinnamon-sugar mixture over the glaze, gently pressing the sugar into the glaze with fingertips to ensure it adheres.
