Ingredients:
- 250g all-purpose flour
- 200g granulated sugar
- 115g unsalted butter, softened
- 2 large eggs, room temperature
- 120g sour cream or full-fat Greek yogurt
- 1.5 teaspoons ground cardamom
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon fine sea salt
- 1 teaspoon vanilla extract
- 2 tablespoons turbinado sugar
- 0.25 teaspoon crushed cardamom seeds
Instructions:
- Preheat oven to 350°F (180°C). Cream the 115g softened butter and 200g sugar together until pale and fluffy. This usually takes about 3 minutes on medium speed.
- Add the 2 large eggs one at a time, beating well after each. Mix in the 1 teaspoon vanilla extract and the 120g sour cream. The mixture should look smooth and velvety.
- Whisk the 250g flour, ground cardamom, baking powder, baking soda, and salt in a separate bowl. Sift this into the wet ingredients and fold gently with a spatula until no flour streaks remain.
- Pour the batter into your greased pan. Sprinkle the 2 tablespoons turbinado sugar and 0.25 teaspoon crushed cardamom seeds over the top.
- Bake for 45 minutes until a skewer comes out clean.
