Ingredients:

  • 1 lb ground beef chuck (80/20)
  • 1 lb sweet Italian sausage, casings removed
  • 1 large yellow onion, finely diced
  • 4 cloves garlic, minced
  • 48 oz marinara sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 8 oz cream cheese, softened
  • 1.5 cups small curd cottage cheese
  • 0.5 cup sour cream
  • 0.25 cup fresh parsley, finely chopped
  • 12 lasagna noodles, cooked al dente
  • 4 cups mozzarella cheese, shredded
  • 0.5 cup parmesan cheese, finely grated

Instructions:

  1. Brown the meats. In a large skillet or Dutch oven over medium high heat, brown the ground beef and Italian sausage together, breaking into small crumbles. Cook until moisture evaporates and meat is deeply browned.
  2. Drain the pan. Remove excess grease carefully. Note: This prevents an oily film from forming on top of the lasagna.
  3. Sauté aromatics. Add the diced onion and minced garlic to the meat. Sauté until the onions are translucent and fragrant.
  4. Simmer the sauce. Stir in the marinara sauce, dried oregano, and dried basil. Simmer on low for 20 minutes until the sauce thickens slightly.
  5. Whip the cream base. In a medium mixing bowl, combine the softened cream cheese, cottage cheese, and sour cream. Fold together until the mixture is uniform and aerated, then stir in the fresh parsley.
  6. Prep the oven. Preheat your oven to 375°F (190°C).
  7. Start the base. Spread a thin layer of the prepared meat sauce on the bottom of a 9x13 inch deep dish baking pan. Note: This prevents the bottom noodles from sticking to the pan.
  8. Layer the ingredients. Place lasagna noodles over the sauce, followed by a layer of the cream cheese mixture, then more meat sauce and a portion of mozzarella cheese.
  9. Repeat and top. Repeat the layers until all ingredients are used, finishing with a final layer of mozzarella and the grated parmesan cheese.
  10. Bake covered. Cover the dish with aluminum foil and bake for 30 minutes.
  11. Final browning. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbling.
  12. Rest for success. Remove from the oven and allow the lasagna to rest for 15 minutes until the structure is set.
