Ingredients:
- 2 cups (250g) All-purpose flour
- 1 tsp (5g) Baking soda
- 1 tsp (5g) Baking powder
- 2 tsp (5g) Pumpkin pie spice
- ½ tsp (3g) Salt
- 1 cup (245g) Pumpkin puree
- ½ cup (115g) Unsalted butter, melted and cooled
- ¾ cup (150g) Light brown sugar, packed
- 2 Large eggs, room temperature
- 1 tsp (5ml) Vanilla extract
- 1 cup (120g) Powdered sugar, sifted
- 3 tbsp (45ml) Pure maple syrup
- 1 tbsp (15g) Unsalted butter, melted
- 1-2 tbsp (15-30ml) Milk or heavy cream
Instructions:
- In a large bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt until no clumps remain.
- In a separate bowl, beat melted butter and brown sugar until smooth. Stir in pumpkin puree, eggs, and vanilla extract until the mixture is a uniform orange color.
- Gently fold the wet ingredients into the dry ingredients using a spatula. Stir only until no streaks of flour remain; do not over-mix.
- Preheat oven to 425°F (218°C). Divide batter evenly among 12 lined muffin cups.
- Bake at 425°F (218°C) for 5 minutes to trigger the rapid rise for bakery-style domes.
- Immediately reduce oven temperature to 350°F (175°C) without opening the door. Bake for another 12–15 minutes, or until a toothpick inserted in the center comes out clean.
- While muffins cool on a wire rack, whisk together powdered sugar, maple syrup, and melted butter. Add milk one tablespoon at a time until the glaze is thick enough to coat a spoon but runny enough to drizzle.
- Once muffins are cool to the touch, drizzle the maple glaze over the tops.
