Ingredients:

  • 2 cups (250g) All-purpose flour
  • 1 tsp (5g) Baking soda
  • 1 tsp (5g) Baking powder
  • 2 tsp (5g) Pumpkin pie spice
  • ½ tsp (3g) Salt
  • 1 cup (245g) Pumpkin puree
  • ½ cup (115g) Unsalted butter, melted and cooled
  • ¾ cup (150g) Light brown sugar, packed
  • 2 Large eggs, room temperature
  • 1 tsp (5ml) Vanilla extract
  • 1 cup (120g) Powdered sugar, sifted
  • 3 tbsp (45ml) Pure maple syrup
  • 1 tbsp (15g) Unsalted butter, melted
  • 1-2 tbsp (15-30ml) Milk or heavy cream

Instructions:

  1. In a large bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt until no clumps remain.
  2. In a separate bowl, beat melted butter and brown sugar until smooth. Stir in pumpkin puree, eggs, and vanilla extract until the mixture is a uniform orange color.
  3. Gently fold the wet ingredients into the dry ingredients using a spatula. Stir only until no streaks of flour remain; do not over-mix.
  4. Preheat oven to 425°F (218°C). Divide batter evenly among 12 lined muffin cups.
  5. Bake at 425°F (218°C) for 5 minutes to trigger the rapid rise for bakery-style domes.
  6. Immediately reduce oven temperature to 350°F (175°C) without opening the door. Bake for another 12–15 minutes, or until a toothpick inserted in the center comes out clean.
  7. While muffins cool on a wire rack, whisk together powdered sugar, maple syrup, and melted butter. Add milk one tablespoon at a time until the glaze is thick enough to coat a spoon but runny enough to drizzle.
  8. Once muffins are cool to the touch, drizzle the maple glaze over the tops.
