Ingredients:
- 1 cup raw almonds
- 1 cup raw cashews
- 1/2 cup raw walnuts
- 1/4 cup pumpkin seeds
- 1 tbsp coconut oil
- 1/4 tsp sea salt
- 1/2 cup dried cranberries
- 1/2 cup raisins
- 1/3 cup dark chocolate chips
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, toss the almonds, cashews, walnuts, and pumpkin seeds with the melted oil and sea salt until evenly coated.
- Spread the nuts in a single layer on the baking sheet.
- Roast for 8 minutes, stirring halfway through, until the nuts smell fragrant and have turned a light golden-brown.
- Immediately transfer the toasted nuts to a large mixing bowl and allow them to cool for at least 10 minutes to ensure the chocolate does not melt.
- Stir in the dried cranberries, raisins, and dark chocolate chips.
- Sprinkle the ground cinnamon over the top and toss one final time to ensure an even distribution.
