Ingredients:

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1/2 cup raw walnuts
  • 1/4 cup pumpkin seeds
  • 1 tbsp coconut oil
  • 1/4 tsp sea salt
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/3 cup dark chocolate chips
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, toss the almonds, cashews, walnuts, and pumpkin seeds with the melted oil and sea salt until evenly coated.
  3. Spread the nuts in a single layer on the baking sheet.
  4. Roast for 8 minutes, stirring halfway through, until the nuts smell fragrant and have turned a light golden-brown.
  5. Immediately transfer the toasted nuts to a large mixing bowl and allow them to cool for at least 10 minutes to ensure the chocolate does not melt.
  6. Stir in the dried cranberries, raisins, and dark chocolate chips.
  7. Sprinkle the ground cinnamon over the top and toss one final time to ensure an even distribution.
