Ingredients:
- 4 medium (approx. 1 lb / 450g) Honeycrisp or Granny Smith apples
- 1 tbsp lemon juice
- 2 tbsp water or unsweetened apple juice
- 1 tsp ground cinnamon
- 1/2 cup rolled oats
- 1/4 cup crushed walnuts or pecans
- 2 tbsp pure maple syrup or liquid monk fruit sweetener
- 1 tbsp coconut oil, melted
- 1/2 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Wash the apples and use a corer or melon baller to remove the center seeds and core, leaving about 1/4 inch (0.6 cm) of fruit at the bottom to act as a bowl. Toss the apple interiors with lemon juice and a pinch of cinnamon.
- In a small bowl, combine the rolled oats, crushed walnuts, maple syrup (or monk fruit), melted coconut oil, and cinnamon. Stir until the oats are evenly coated.
- Place the prepared apples upright in a 9x9 inch baking dish. Spoon the oat mixture evenly into the center of each apple, pressing down slightly with a spoon. Pour the water or apple juice into the bottom of the dish.
- Bake for 40–45 minutes until the apple skin looks slightly shriveled, the fruit is tender when pierced with a fork, and the topping is a toasted golden-brown.
