Ingredients:

  • 4 medium (approx. 1 lb / 450g) Honeycrisp or Granny Smith apples
  • 1 tbsp lemon juice
  • 2 tbsp water or unsweetened apple juice
  • 1 tsp ground cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup crushed walnuts or pecans
  • 2 tbsp pure maple syrup or liquid monk fruit sweetener
  • 1 tbsp coconut oil, melted
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Wash the apples and use a corer or melon baller to remove the center seeds and core, leaving about 1/4 inch (0.6 cm) of fruit at the bottom to act as a bowl. Toss the apple interiors with lemon juice and a pinch of cinnamon.
  2. In a small bowl, combine the rolled oats, crushed walnuts, maple syrup (or monk fruit), melted coconut oil, and cinnamon. Stir until the oats are evenly coated.
  3. Place the prepared apples upright in a 9x9 inch baking dish. Spoon the oat mixture evenly into the center of each apple, pressing down slightly with a spoon. Pour the water or apple juice into the bottom of the dish.
  4. Bake for 40–45 minutes until the apple skin looks slightly shriveled, the fruit is tender when pierced with a fork, and the topping is a toasted golden-brown.
