Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (2g) baking powder
  • 1 tbsp (8g) ground cinnamon
  • ½ tsp (3g) sea salt
  • 1 ½ cups (360ml) unsweetened almond milk
  • ¼ cup (60ml) pure maple syrup
  • 1 tsp (5ml) pure vanilla extract
  • 1 large egg
  • 2 medium (300g) Honeycrisp or Granny Smith apples, peeled and diced
  • 1 tbsp (15g) coconut oil, melted
  • ¼ cup (30g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease your 8x8 inch baking dish with melted coconut oil.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
  3. Stir in the almond milk, maple syrup, vanilla, and egg. Whisk until the mixture is smooth and the oats are fully submerged.
  4. Gently fold in the diced apples and chopped walnuts using a spatula until evenly distributed.
  5. Pour the mixture into the prepared baking dish and smooth the top with a spoon.
  6. Bake for 30 minutes until the edges are mahogany-colored and the center is set.
  7. Let the bake cool for 5 minutes before slicing into squares.
