Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (2g) baking powder
- 1 tbsp (8g) ground cinnamon
- ½ tsp (3g) sea salt
- 1 ½ cups (360ml) unsweetened almond milk
- ¼ cup (60ml) pure maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1 large egg
- 2 medium (300g) Honeycrisp or Granny Smith apples, peeled and diced
- 1 tbsp (15g) coconut oil, melted
- ¼ cup (30g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease your 8x8 inch baking dish with melted coconut oil.
- In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.
- Stir in the almond milk, maple syrup, vanilla, and egg. Whisk until the mixture is smooth and the oats are fully submerged.
- Gently fold in the diced apples and chopped walnuts using a spatula until evenly distributed.
- Pour the mixture into the prepared baking dish and smooth the top with a spoon.
- Bake for 30 minutes until the edges are mahogany-colored and the center is set.
- Let the bake cool for 5 minutes before slicing into squares.
