Ingredients:

  • 3 cups (270g) old-fashioned rolled oats
  • 1 cup (130g) dried apple pieces, chopped small
  • 1 tbsp (8g) ground cinnamon
  • ½ tsp (3g) sea salt
  • ½ cup (120ml) pure maple syrup
  • ⅓ cup (80ml) melted coconut oil
  • 1 tsp (5ml) vanilla extract
  • ½ cup (65g) raw walnuts or pecans, roughly chopped
  • 2 tbsp (15g) chia seeds or flaxseeds

Instructions:

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped dried apples, cinnamon, and sea salt, stirring until the oats are evenly coated in spice.
  3. Pour the melted coconut oil, maple syrup, and vanilla extract directly over the oat mixture.
  4. Using a silicone spatula, fold the ingredients together until every oat is glistening and the nuts and seeds are fully incorporated.
  5. Spread the mixture onto the baking sheet and press down firmly with the back of a spatula to create a compact layer.
  6. Bake for 20–25 minutes, stirring gently halfway through, until the granola smells nutty and looks golden brown.
  7. Remove from the oven and immediately press the granola down again. Let it cool completely on the pan for at least 20 minutes to ensure a crispy texture.
