Ingredients:
- 3 cups (270g) old-fashioned rolled oats
- 1 cup (130g) dried apple pieces, chopped small
- 1 tbsp (8g) ground cinnamon
- ½ tsp (3g) sea salt
- ½ cup (120ml) pure maple syrup
- ⅓ cup (80ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- ½ cup (65g) raw walnuts or pecans, roughly chopped
- 2 tbsp (15g) chia seeds or flaxseeds
Instructions:
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, chopped dried apples, cinnamon, and sea salt, stirring until the oats are evenly coated in spice.
- Pour the melted coconut oil, maple syrup, and vanilla extract directly over the oat mixture.
- Using a silicone spatula, fold the ingredients together until every oat is glistening and the nuts and seeds are fully incorporated.
- Spread the mixture onto the baking sheet and press down firmly with the back of a spatula to create a compact layer.
- Bake for 20–25 minutes, stirring gently halfway through, until the granola smells nutty and looks golden brown.
- Remove from the oven and immediately press the granola down again. Let it cool completely on the pan for at least 20 minutes to ensure a crispy texture.
