Ingredients:

  • 1.5 cups rolled oats
  • 1 cup almond flour
  • 0.5 cup pure maple syrup
  • 0.25 cup melted coconut oil
  • 1 tsp ground cinnamon
  • 0.25 tsp sea salt
  • 4 cups Granny Smith apples, peeled and diced small
  • 2 tbsp lemon juice
  • 2 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 0.25 tsp ground ginger
  • 1 tbsp cornstarch

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
  2. In a large bowl, stir together the rolled oats, almond flour, cinnamon, and salt. Mix in melted coconut oil and maple syrup until a thick dough forms.
  3. Press 2/3 of the oat mixture firmly into the bottom of the prepared baking pan.
  4. In a medium saucepan over medium heat, combine diced apples, lemon juice, maple syrup, cinnamon, and ginger. Cook for 5–7 minutes until apples soften.
  5. Whisk cornstarch with a teaspoon of water to create a slurry, stir into the apple mixture, and simmer for 2 minutes until thickened.
  6. Spread the apple filling evenly over the oat base.
  7. Crumble the remaining 1/3 of the oat dough over the top of the filling.
  8. Bake for 30–35 minutes until edges pull away and the top is golden brown.
  9. Cool completely in the pan for at least 1 hour before slicing into 12 bars.
