Ingredients:
- 1.5 cups rolled oats
- 1 cup almond flour
- 0.5 cup pure maple syrup
- 0.25 cup melted coconut oil
- 1 tsp ground cinnamon
- 0.25 tsp sea salt
- 4 cups Granny Smith apples, peeled and diced small
- 2 tbsp lemon juice
- 2 tbsp pure maple syrup
- 1 tsp ground cinnamon
- 0.25 tsp ground ginger
- 1 tbsp cornstarch
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
- In a large bowl, stir together the rolled oats, almond flour, cinnamon, and salt. Mix in melted coconut oil and maple syrup until a thick dough forms.
- Press 2/3 of the oat mixture firmly into the bottom of the prepared baking pan.
- In a medium saucepan over medium heat, combine diced apples, lemon juice, maple syrup, cinnamon, and ginger. Cook for 5–7 minutes until apples soften.
- Whisk cornstarch with a teaspoon of water to create a slurry, stir into the apple mixture, and simmer for 2 minutes until thickened.
- Spread the apple filling evenly over the oat base.
- Crumble the remaining 1/3 of the oat dough over the top of the filling.
- Bake for 30–35 minutes until edges pull away and the top is golden brown.
- Cool completely in the pan for at least 1 hour before slicing into 12 bars.
