Ingredients:
- 2 cups (240g) oat flour
- 1 tbsp (8g) ground cinnamon
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (120g) plain Greek yogurt
- 1/2 cup (170g) honey
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) melted coconut oil
- 2 cups (250g) shredded apples
- 1/2 tsp (2g) ground cloves
Instructions:
- In a large mixing bowl, whisk together the oat flour, cinnamon, baking soda, and salt until no clumps remain.
- Create a well in the center of the dry ingredients and add the Greek yogurt, honey, egg, vanilla, and melted coconut oil.
- Stir with a spatula until the batter is smooth and just combined; do not overmix to ensure the bread remains tender.
- Gently fold in the shredded apples and ground cloves until evenly distributed.
- Pour the batter into a parchment-lined 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
