Ingredients:
- 2 cups (180g) Old Fashioned Rolled Oats
- 1 cup (245g) Plain Greek Yogurt
- 1/2 cup (120ml) Unsweetened Almond Milk
- 1/3 cup (80ml) Pure Maple Syrup
- 1 tsp (5g) Baking Powder
- 1 tsp (2g) Ground Cinnamon
- 1/2 tsp (3g) Salt
- 1 tsp (5ml) Vanilla Extract
- 2 medium (300g) Granny Smith Apples, peeled and diced
- 1 tbsp (8g) Ground Cinnamon
- 1 tbsp (15ml) Melted Coconut Oil
- 1/4 cup (30g) Chopped Walnuts
Instructions:
- Preheat the oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish.
- In a large mixing bowl, whisk together the Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
- Stir in the rolled oats, baking powder, salt, and 1 teaspoon of ground cinnamon until the oats are fully combined.
- In a separate bowl, toss the diced apples with melted coconut oil and 1 tablespoon of ground cinnamon until evenly coated.
- Fold half of the cinnamon-coated apple mixture into the oat batter.
- Pour the batter into the prepared baking dish and smooth the surface with a spatula.
- Scatter the remaining cinnamon-coated apples and chopped walnuts over the top of the batter.
- Bake for 35–40 minutes until the edges are golden-brown and the center is set.
- Remove from oven and let cool for 10 minutes before slicing into servings.
