Ingredients:

  • 1.5 lbs lean ground beef (85/15 or 90/10)
  • 1/2 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups potatoes, peeled and small-diced (1/4 inch)
  • 2 cups carrots, sliced into thin rounds
  • 1 cup yellow onion, diced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil

Instructions:

  1. In a large mixing bowl, combine the ground beef, ketchup, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix by hand until the beef is evenly coated and glossy.
  2. In a separate bowl, toss the diced potatoes, carrots, and onions with olive oil and a pinch of salt.
  3. Cut six 12-inch squares of heavy-duty aluminum foil.
  4. Place a handful of the seasoned vegetable mix in the center of each foil square. Top with a generous scoop of the beef mixture, pressing it down slightly to form a flat patty.
  5. Place one pat of butter on top of the beef in each packet.
  6. Fold the sides of the foil up and pinch the seams tightly to create a sealed pouch, leaving a small pocket of air inside for steam circulation.
  7. Cook on a medium-high grill, over hot campfire coals, or in an oven at 400°F (200°C) for 20–25 minutes until the foil puffs up and the potatoes are tender.
