Ingredients:
- 2 cups (300g) Granny Smith apples, peeled, cored, and diced
- 2 tbsp (30ml) lemon juice
- 1/4 cup (50g) granulated sugar
- 1/2 tsp (2g) salt
- 2 cups (480ml) heavy whipping cream, chilled
- 1 can (14 oz / 397g) sweetened condensed milk
- 1 tsp (5ml) vanilla extract
Instructions:
- Combine the diced apples, lemon juice, sugar, and salt in a blender. Process until the mixture is completely smooth and velvety.
- In a large chilled bowl, beat the heavy whipping cream until stiff peaks form.
- In a separate bowl, stir the sweetened condensed milk and vanilla extract together until combined, then gently fold in the apple puree until the mixture is a uniform light green color.
- Gently fold the whipped cream into the apple mixture using a spatula, taking care not to over-mix to keep the air bubbles intact.
- Pour the mixture into an airtight freezer container, smooth the top, and freeze for at least 4 hours or until firm.
