Ingredients:

  • 1 lb Kirby or Persian cucumbers, sliced into spears or rounds
  • 4 cloves garlic, smashed
  • 3 sprigs fresh dill, roughly chopped
  • 1 cup white distilled vinegar
  • 1 cup filtered water
  • 1 tbsp sea salt
  • 1 tsp granulated sugar
  • ½ tsp black peppercorns
  • ½ tsp mustard seeds

Instructions:

  1. Wash the cucumbers thoroughly and slice them into spears or 1/4-inch rounds.
  2. Divide the smashed garlic cloves and fresh dill sprigs evenly between the bottom of a clean 1-quart glass mason jar.
  3. In a mixing bowl, combine the vinegar, water, salt, sugar, peppercorns, and mustard seeds. Stir vigorously until the salt and sugar are completely dissolved.
  4. Pack the cucumber slices tightly into the jar, layering them vertically to maximize space.
  5. Pour the brine over the cucumbers until they are completely submerged. Tap the jar gently on the counter to release any trapped air bubbles.
  6. Seal the jar with a lid and place immediately in the refrigerator for 24 hours to allow flavors to develop.
