Ingredients:
- 1 lb Kirby or Persian cucumbers, sliced into spears or rounds
- 4 cloves garlic, smashed
- 3 sprigs fresh dill, roughly chopped
- 1 cup white distilled vinegar
- 1 cup filtered water
- 1 tbsp sea salt
- 1 tsp granulated sugar
- ½ tsp black peppercorns
- ½ tsp mustard seeds
Instructions:
- Wash the cucumbers thoroughly and slice them into spears or 1/4-inch rounds.
- Divide the smashed garlic cloves and fresh dill sprigs evenly between the bottom of a clean 1-quart glass mason jar.
- In a mixing bowl, combine the vinegar, water, salt, sugar, peppercorns, and mustard seeds. Stir vigorously until the salt and sugar are completely dissolved.
- Pack the cucumber slices tightly into the jar, layering them vertically to maximize space.
- Pour the brine over the cucumbers until they are completely submerged. Tap the jar gently on the counter to release any trapped air bubbles.
- Seal the jar with a lid and place immediately in the refrigerator for 24 hours to allow flavors to develop.
