Ingredients:
- 6 cups peeled and sliced Granny Smith apples
- 1/2 cup coconut sugar or light brown sugar
- 1 tbsp ground cinnamon
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 box (432g) yellow or white cake mix
- 1/2 cup unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C). In a large bowl, toss the sliced apples with coconut sugar, cinnamon, lemon juice, and vanilla. Pour the mixture into a 9x13 inch baking dish, spreading the apples evenly.
- Sprinkle the dry cake mix evenly over the top of the apples. Use a fork or your fingers to gently level the powder, ensuring there are no large clumps.
- Drizzle the melted butter evenly across the top of the cake mix, covering the edges and center. Bake for 40 minutes or until the top is a deep golden brown and the apple juices are bubbling up the sides.
