Ingredients:

  • 6 cups peeled and sliced Granny Smith apples
  • 1/2 cup coconut sugar or light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 box (432g) yellow or white cake mix
  • 1/2 cup unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, toss the sliced apples with coconut sugar, cinnamon, lemon juice, and vanilla. Pour the mixture into a 9x13 inch baking dish, spreading the apples evenly.
  2. Sprinkle the dry cake mix evenly over the top of the apples. Use a fork or your fingers to gently level the powder, ensuring there are no large clumps.
  3. Drizzle the melted butter evenly across the top of the cake mix, covering the edges and center. Bake for 40 minutes or until the top is a deep golden brown and the apple juices are bubbling up the sides.
