Ingredients:
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) fine sea salt
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 tbsp (12ml) pure vanilla extract
- 4 large (200g) eggs, room temperature
- 1/2 cup (120g) plain Greek yogurt, room temperature
- 2 tbsp (30ml) whole milk
Instructions:
- Preheat oven to 325°F (165°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- Beat softened butter and sugar on medium-high speed for 3-5 minutes until the mixture is pale, fluffy, and doubled in volume.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and Greek yogurt until smooth and glossy.
- Gradually add flour, baking powder, and salt on low speed. Mix until white streaks disappear, then stir in the milk by hand.
- Pour batter into the pan and smooth the top. Bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
