Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) fine sea salt
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12ml) pure vanilla extract
  • 4 large (200g) eggs, room temperature
  • 1/2 cup (120g) plain Greek yogurt, room temperature
  • 2 tbsp (30ml) whole milk

Instructions:

  1. Preheat oven to 325°F (165°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. Beat softened butter and sugar on medium-high speed for 3-5 minutes until the mixture is pale, fluffy, and doubled in volume.
  3. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and Greek yogurt until smooth and glossy.
  4. Gradually add flour, baking powder, and salt on low speed. Mix until white streaks disappear, then stir in the milk by hand.
  5. Pour batter into the pan and smooth the top. Bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
