Ingredients:
- 1/2 cup (115g) mayonnaise
- 2 tbsp (30g) sweet pickle relish
- 1 tbsp (15g) yellow mustard
- 1 tsp (2g) paprika
- 1 tsp (2g) onion powder
- 1/2 tsp (1g) garlic powder
- 1/2 tsp (3g) sugar
- 1/4 tsp (1.5g) salt
- 1 lb (450g) ground beef (80/20 blend)
- 8 small (6-inch) flour tortillas
- 8 slices (110g) American cheese
- 1 cup (30g) shredded iceberg lettuce
- 1/2 cup (50g) finely diced white onion
- 16 slices (60g) dill pickle chips
Instructions:
- Combine the mayonnaise, relish, mustard, paprika, onion powder, garlic powder, sugar, and salt in a small bowl. Stir until uniform and refrigerate.
- Divide the ground beef into 8 equal portions (about 2 oz each). Place a ball of beef on a tortilla and press down firmly with a spatula until the meat is spread thin toward the edges.
- Place the beef-side down in a hot skillet over medium-high heat. Press again with the spatula and cook for 2-3 minutes until the beef is mahogany-colored.
- Flip the taco so the tortilla touches the pan. Immediately place a slice of cheese on the beef and cook for 1-2 minutes until the tortilla is toasted and cheese is melted.
- Remove from heat. Top the melted cheese with shredded lettuce, diced onions, and two pickle chips. Drizzle with the special sauce.
