Ingredients:

  • 3 lbs boneless, skinless chicken thighs
  • 12 oz Dr Pepper soda
  • 1.5 cups smoky BBQ sauce
  • 2 tbsp apple cider vinegar
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper

Instructions:

  1. Place the diced onion and minced garlic at the bottom of the slow cooker ceramic pot to create a flavor bed.
  2. Lay the chicken thighs on top of the aromatics in a single layer or slightly overlapping, ensuring they are snug.
  3. In a small bowl, whisk together the Dr Pepper, BBQ sauce, apple cider vinegar, smoked paprika, and black pepper.
  4. Pour the sauce mixture evenly over the chicken, cover with the lid, and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the chicken yields easily to a fork.
  5. Remove the chicken to a platter and shred the meat along the grain using two forks.
  6. Return the shredded chicken to the slow cooker and stir into the remaining sauce until fully coated.
