Ingredients:
- 3 lbs boneless, skinless chicken thighs
- 12 oz Dr Pepper soda
- 1.5 cups smoky BBQ sauce
- 2 tbsp apple cider vinegar
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 0.5 tsp smoked paprika
- 0.5 tsp black pepper
Instructions:
- Place the diced onion and minced garlic at the bottom of the slow cooker ceramic pot to create a flavor bed.
- Lay the chicken thighs on top of the aromatics in a single layer or slightly overlapping, ensuring they are snug.
- In a small bowl, whisk together the Dr Pepper, BBQ sauce, apple cider vinegar, smoked paprika, and black pepper.
- Pour the sauce mixture evenly over the chicken, cover with the lid, and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the chicken yields easily to a fork.
- Remove the chicken to a platter and shred the meat along the grain using two forks.
- Return the shredded chicken to the slow cooker and stir into the remaining sauce until fully coated.
