Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated white sugar
- 3/4 cup (165g) packed light brown sugar
- 2 large eggs (100g)
- 1 tsp (5ml) pure vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 cups (150g) old-fashioned rolled oats
- 1 cup (170g) semi-sweet chocolate chips
- 1 cup (115g) chopped pecans
- 1 cup (100g) sweetened shredded coconut
Instructions:
- Beat the softened butter and both sugars together on medium-high speed until the mixture looks pale and fluffy, roughly 2 to 3 minutes.
- Add the eggs one at a time, followed by the vanilla, beating well after each addition until the batter is smooth.
- In a separate bowl, whisk the flour, baking soda, and salt.
- Gradually stir the flour mixture into the wet ingredients on low speed until just combined.
- Fold in the rolled oats by hand.
- Stir in the chocolate chips, pecans, and coconut until the mix-ins are evenly distributed throughout the dough.
- Scoop rounded tablespoons of dough (about 2 tbsp each) onto parchment-lined sheets, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10-12 minutes, pulling them out when the edges are set and light golden-brown, but the centers still look slightly soft.
