Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated white sugar
  • 3/4 cup (165g) packed light brown sugar
  • 2 large eggs (100g)
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 1/2 cups (150g) old-fashioned rolled oats
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (115g) chopped pecans
  • 1 cup (100g) sweetened shredded coconut

Instructions:

  1. Beat the softened butter and both sugars together on medium-high speed until the mixture looks pale and fluffy, roughly 2 to 3 minutes.
  2. Add the eggs one at a time, followed by the vanilla, beating well after each addition until the batter is smooth.
  3. In a separate bowl, whisk the flour, baking soda, and salt.
  4. Gradually stir the flour mixture into the wet ingredients on low speed until just combined.
  5. Fold in the rolled oats by hand.
  6. Stir in the chocolate chips, pecans, and coconut until the mix-ins are evenly distributed throughout the dough.
  7. Scoop rounded tablespoons of dough (about 2 tbsp each) onto parchment-lined sheets, spacing them 2 inches apart.
  8. Bake at 350°F (175°C) for 10-12 minutes, pulling them out when the edges are set and light golden-brown, but the centers still look slightly soft.
