Ingredients:

  • 1 cup (225g) cottage cheese
  • 2 large (100g) eggs
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (15g) almond flour
  • 1 tbsp (15ml) olive oil

Instructions:

  1. Combine the cottage cheese, eggs, garlic powder, and salt in a blender. Process on high for 45-60 seconds until the mixture is completely smooth and velvety.
  2. If using almond flour, pulse it into the batter at the very end.
  3. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Pour the batter into the center of the parchment paper and spread evenly with a spatula until it is approximately 1/4 inch thick.
  5. Bake for 30-35 minutes until the edges are mahogany-brown and the center is firm to the touch.
  6. Remove from the oven and let it cool for 2 minutes before peeling it off the parchment paper.
