Ingredients:

  • 3 medium overripe bananas, mashed (approx. 300g)
  • 1/4 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 1/4 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3/4 cup semi-sweet chocolate chips

Instructions:

  1. Mash the bananas in a large bowl until smooth. Note: A few small lumps are fine, but try to avoid big chunks.
  2. Whisk in the melted coconut oil, maple syrup, egg, Greek yogurt, and vanilla. Mix until the batter looks glossy and emulsified.
  3. Sift the flour, baking soda, salt, and cinnamon directly over the wet ingredients. This prevents clumps of baking soda from ending up in your slice.
  4. Gently fold the mixture together using a spatula. Stop the second you don't see any more white streaks of flour. Note: Overmixing here is why bread becomes tough.
  5. Stir in the chocolate chips quickly.
  6. Pour the batter into a parchment lined 9x5 inch loaf pan. Smooth the top with your spatula.
  7. Bake at 350°F (175°C) for 50-60 minutes.
  8. Check for doneness until the top is deep mahogany brown and a toothpick inserted into the center comes out with a few moist crumbs.
