Ingredients:
- 3 large overripe bananas, mashed (approx. 330g)
- 2 large eggs, room temperature
- 125g plain non fat Greek yogurt
- 60ml pure maple syrup
- 5ml pure vanilla extract
- 120g oat flour
- 60g chocolate whey protein powder
- 30g unsweetened dark cocoa powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 80g dark chocolate chips
Instructions:
- Preheat your oven to 175°C. Note: A preheated oven ensures the baking soda activates immediately for maximum rise.
- Mash 330g of overripe bananas in a large bowl. Cook until completely smooth with no large lumps.
- Whisk 2 eggs, 125g Greek yogurt, 60ml maple syrup, and 5ml vanilla into the bananas. Note: Whisking thoroughly aerates the mixture, leading to a lighter bread.
- Combine 120g oat flour, 60g protein powder, 30g cocoa, baking soda, and salt in a separate bowl.
- Fold the dry ingredients into the wet mixture using a spatula. Mix until the last streak of flour disappears.
- Stir in 80g of dark chocolate chips gently.
- Pour the batter into a lined loaf pan and smooth the top.
- Bake for 45 minutes until a toothpick inserted in the center comes out clean.
- Rest the loaf in the pan for 10 minutes before moving to a wire rack. Wait until completely cool before slicing.
