Ingredients:
- 1 large English Cucumber (450g), diced
- 2 cups cherry tomatoes (300g), halved
- 6 oz feta cheese (170g), cubed or crumbled
- 1/4 cup red onion (40g), finely diced
- 3 tbsp fresh parsley (10g), chopped
- 1 tbsp fresh mint (2g), finely chopped
- 3 tbsp extra virgin olive oil (45ml)
- 2 tbsp red wine vinegar (30ml)
- 1 tbsp lemon juice (15ml)
- 1 clove garlic (5g), minced
- 1 tsp dried oregano (1g)
- 1/2 tsp black pepper (1g)
- 1/4 tsp sea salt (1.5g)
Instructions:
- Wash and dry all produce thoroughly. Dice the cucumber into 3/4 inch chunks and halve the cherry tomatoes. Finely mince the red onion and place all vegetables in a large mixing bowl. Note: Drying the veg prevents the dressing from sliding off.
- Combine the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, and black pepper in a small jar.
- Shake the jar vigorously for 30 seconds until the mixture is opaque and emulsified. Note: This prevents the oil from separating.
- Pour the dressing over the cucumber, tomato, and onion mixture.
- Toss gently for about 1 minute until every piece of vegetable is glossy.
- Add the cubed feta cheese to the bowl.
- Fold in the chopped parsley and mint using a spatula.
- Mix carefully for 30 seconds until the herbs are distributed but the feta is still intact.
- Let the salad sit for 5 minutes before serving to let the flavors meld.
