Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 packet (30g) taco seasoning
  • 1/2 cup water
  • 16 oz thick-cut tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 small white onion, finely diced
  • 1 cup pickled jalapeños, sliced
  • 1/2 cup sour cream
  • 1 medium avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

  1. Heat the olive oil in the Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it is browned and no longer pink.
  2. Stir in the taco seasoning and water, simmering for 3–5 minutes until the liquid has reduced to a thick, glossy glaze that clings to the meat. Remove the beef from the pot and set aside.
  3. Wipe the pot quickly if needed. Start the build by placing a generous layer of tortilla chips covering the bottom.
  4. Spread one-third of the seasoned beef over the chips, followed by a handful of diced onions, jalapeños, and a heavy layer of the mixed cheeses.
  5. Repeat the layering process two more times, ending with a final layer of cheese.
  6. Cover with the lid and cook over the campfire until the cheese is completely melted and bubbly.
  7. Top with diced avocado, sour cream, fresh cilantro, and a squeeze of lime juice before serving.
