Ingredients:
- 3 tbsp olive oil
- 1/4 cup fresh lemon juice
- 1 tbsp honey
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 2 lbs chicken breast, cut into 1-inch cubes
- 2 medium red bell peppers, cut into 1-inch pieces
- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into 1-inch chunks
Instructions:
- In a large Ziploc bag, whisk together the olive oil, lemon juice, honey, garlic, oregano, salt, and pepper. Add the cubed chicken breasts and seal the bag, massaging the marinade into the meat.
- Let the chicken chill in a cooler or refrigerator for 1 hour to tenderize.
- Thread the marinated chicken onto skewers, alternating with red onion, zucchini, and red bell pepper, leaving small gaps between ingredients.
- Prepare a campfire and wait until you have glowing red embers. Place a grill grate over the heat and let it become searing hot.
- Grill the skewers for 5–6 minutes per side, turning once, until the chicken reaches an internal temperature of 165°F (74°C).
- Remove skewers from heat and let them rest on a clean plate for 5 minutes before serving.
