Ingredients:

  • 2 cans (800g) cherry pie filling
  • 1 tbsp (15ml) fresh lemon juice
  • 1 box (432g) yellow cake mix
  • 12 oz (355ml) Sprite or lemon-lime soda
  • 1/2 cup (115g) unsalted butter, cold and cubed

Instructions:

  1. Pour the cherry pie filling directly into the bottom of a 12-inch cast iron Dutch oven and stir in the lemon juice to brighten the flavor.
  2. Pour the dry yellow cake mix directly over the cherries without stirring.
  3. Slowly pour the Sprite over the cake mix, allowing it to soak in naturally.
  4. Dot the cold butter cubes evenly across the top of the batter.
  5. Cover with the lid and place the Dutch oven over a bed of hot coals, positioning 8–12 charcoal briquettes on the lid.
  6. Bake for 45–50 minutes until the crust is mahogany-colored and the cherry filling bubbles up around the edges.
