Ingredients:
- 4 whole wheat English muffins
- 2 tbsp butter
- 4 turkey sausage patties, pre-cooked
- 4 large eggs
- 4 slices low-fat sharp cheddar cheese
- 1 cup fresh baby spinach, chopped
- 1/2 tsp cracked black pepper
- 1/4 tsp sea salt
- 1 tbsp hot sauce
Instructions:
- Pre-cook the turkey patties and chop the spinach at home; store in a sealed container.
- Whisk the eggs with salt and pepper in a leak-proof container.
- Butter the inside of each English muffin half.
- In the bottom of the pie iron, layer in this order: bottom muffin, cheese slice, pre-cooked turkey patty, and a handful of spinach.
- Pour the whisked egg over the filling until it reaches the edges, then cap with the second cheese slice and the top muffin.
- Place the closed iron directly into glowing coals and cook for 3–5 minutes per side until the bread is golden and the egg is set.
- Remove from heat and let the sandwich rest inside the iron for 60 seconds before serving.
- Gently slide the sandwich out and drizzle with hot sauce.
