Ingredients:

  • 8 large flour tortillas (10-inch)
  • 1 lb breakfast sausage, cooked and crumbled
  • 10 large eggs, scrambled and cooled
  • 2 cups frozen tater tots, browned
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Instructions:

  1. Sauté the diced onion and red bell pepper in vegetable oil until translucent. Stir in the smoked paprika, salt, and black pepper.
  2. In a separate pan, brown the breakfast sausage and tater tots until golden-brown.
  3. Scramble the eggs until just set.
  4. Spread the cooked eggs, sausage, potatoes, and vegetables on a baking sheet and let them cool completely to prevent tortilla sogginess.
  5. Lay out a tortilla and place a handful of shredded cheddar cheese in the center.
  6. Layer the cooled eggs, protein, and potatoes over the cheese.
  7. Fold in the sides of the tortilla and roll tightly.
  8. Wrap each burrito individually in a square of heavy-duty aluminum foil, twisting the ends securely.
  9. Place the foil-wrapped burritos on a campfire grate over medium-hot embers.
  10. Heat for 5–7 minutes per side, rotating with tongs, until the foil is hot to the touch and the cheese has melted.
