Ingredients:
- 8 large flour tortillas (10-inch)
- 1 lb breakfast sausage, cooked and crumbled
- 10 large eggs, scrambled and cooled
- 2 cups frozen tater tots, browned
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, finely diced
- 1 red bell pepper, finely diced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
Instructions:
- Sauté the diced onion and red bell pepper in vegetable oil until translucent. Stir in the smoked paprika, salt, and black pepper.
- In a separate pan, brown the breakfast sausage and tater tots until golden-brown.
- Scramble the eggs until just set.
- Spread the cooked eggs, sausage, potatoes, and vegetables on a baking sheet and let them cool completely to prevent tortilla sogginess.
- Lay out a tortilla and place a handful of shredded cheddar cheese in the center.
- Layer the cooled eggs, protein, and potatoes over the cheese.
- Fold in the sides of the tortilla and roll tightly.
- Wrap each burrito individually in a square of heavy-duty aluminum foil, twisting the ends securely.
- Place the foil-wrapped burritos on a campfire grate over medium-hot embers.
- Heat for 5–7 minutes per side, rotating with tongs, until the foil is hot to the touch and the cheese has melted.
