Ingredients:

  • 1 wheel (8 oz / 225 g) Brie cheese
  • 3 tbsp (45 ml) jam (apricot, fig, or raspberry)
  • 1 tbsp (15 ml) honey
  • 1/4 cup (30 g) chopped walnuts or pecans
  • 1/2 cup (75 g) cherry tomatoes, halved

Instructions:

  1. Remove the brie from its packaging and lightly score the top rind in a crosshatch pattern using a sharp knife to allow heat penetration.
  2. Place the brie wheel in the center of a cast iron skillet or a heavy-duty aluminum foil packet.
  3. Spoon the jam over the scored top of the cheese and drizzle with honey.
  4. Scatter the halved cherry tomatoes and chopped walnuts around the base of the cheese wheel.
  5. Place the skillet or foil packet on a campfire grate over medium-hot coals (avoid direct flames) and cook for 8–12 minutes until the cheese is soft and the jam is bubbling.
