Ingredients:
- 1 wheel (8 oz / 225 g) Brie cheese
- 3 tbsp (45 ml) jam (apricot, fig, or raspberry)
- 1 tbsp (15 ml) honey
- 1/4 cup (30 g) chopped walnuts or pecans
- 1/2 cup (75 g) cherry tomatoes, halved
Instructions:
- Remove the brie from its packaging and lightly score the top rind in a crosshatch pattern using a sharp knife to allow heat penetration.
- Place the brie wheel in the center of a cast iron skillet or a heavy-duty aluminum foil packet.
- Spoon the jam over the scored top of the cheese and drizzle with honey.
- Scatter the halved cherry tomatoes and chopped walnuts around the base of the cheese wheel.
- Place the skillet or foil packet on a campfire grate over medium-hot coals (avoid direct flames) and cook for 8–12 minutes until the cheese is soft and the jam is bubbling.
