Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 3 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk, room temperature
- 3 cups Granny Smith apples, peeled and diced
- 1 tbsp ground cinnamon
- 2 tbsp brown sugar
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- 1 1/2 tbsp heavy cream
- 1 pinch salt
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a medium bowl, toss the diced apples with cinnamon and 2 tbsp of brown sugar until evenly coated; set aside.
- Beat the softened butter, brown sugar, and granulated sugar on medium-high until the mixture is light and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Slowly mix in the flour, baking powder, and salt, alternating with the buttermilk, starting and ending with the flour mixture.
- Gently fold the spiced apples into the batter using a spatula until just distributed.
- Pour the batter into the prepared springform pan and bake for 50 minutes.
- Prepare the glaze by combining 2 tbsp butter, 2 tbsp brown sugar, heavy cream, and a pinch of salt over low heat until melted, then pour over the cake.
