  • 1 large lemon, zested and juiced
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Aggressively pat the cod fillets dry on both sides with paper towels to ensure a delicate roasted finish.
  3. Season the fillets generously with kosher salt, black pepper, and smoked paprika. Place them in a 9x13 baking dish, ensuring they are not touching.
  4. In a small bowl, whisk together the olive oil, melted butter, lemon juice, lemon zest, minced garlic, and dried herbs to create a temporary emulsion.
  5. Pour the lemon-garlic mixture over the fillets, using a brush or spoon to ensure the tops and sides are well-coated.
  6. Bake in the center rack for 12-15 minutes, or until the internal temperature reaches 145°F and the fish is opaque and yields to pressure.
