- 2 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C).
- Aggressively pat the cod fillets dry on both sides with paper towels to ensure a delicate roasted finish.
- Season the fillets generously with kosher salt, black pepper, and smoked paprika. Place them in a 9x13 baking dish, ensuring they are not touching.
- In a small bowl, whisk together the olive oil, melted butter, lemon juice, lemon zest, minced garlic, and dried herbs to create a temporary emulsion.
- Pour the lemon-garlic mixture over the fillets, using a brush or spoon to ensure the tops and sides are well-coated.
