Ingredients:

  • 4 (6 oz / 170 g) Cod fillets, patted dry
  • 1 tsp (6 g) Sea salt
  • ½ tsp (1 g) Black pepper
  • 4 tbsp (56 g) Unsalted butter, melted
  • 2 tbsp (30 ml) Fresh lemon juice
  • 1 tbsp (6 g) Lemon zest
  • 3 cloves (9 g) Garlic, minced
  • 1 tsp (2 g) Dried oregano or thyme
  • 1 lemon, thinly sliced into rounds
  • 2 tbsp (8 g) Fresh parsley, chopped
  • 1 tbsp (15 ml) Extra virgin olive oil

Instructions:

  1. Preheat your oven to 400°F (205°C).
  2. In a small bowl, whisk together the melted butter, lemon juice, zest, minced garlic, and dried herbs.
  3. Tear four 12-inch squares of heavy-duty foil and drizzle each center with a small amount of olive oil to prevent sticking.
  4. Place one cod fillet in the center of each foil square and season generously with salt and pepper.
  5. Spoon the butter mixture over the fish, then top with two lemon slices and a sprinkle of fresh parsley.
  6. Bring the sides of the foil together and twist the ends tightly to create a sealed pouch, leaving about an inch of headspace for steam to circulate.
  7. Place packets on a baking sheet and bake for 15–20 minutes until the thickest part of the fillet reaches 145°F (63°C) and flakes easily with a fork.
