Ingredients:
- 4 (6 oz / 170 g) Cod fillets, patted dry
- 1 tsp (6 g) Sea salt
- ½ tsp (1 g) Black pepper
- 4 tbsp (56 g) Unsalted butter, melted
- 2 tbsp (30 ml) Fresh lemon juice
- 1 tbsp (6 g) Lemon zest
- 3 cloves (9 g) Garlic, minced
- 1 tsp (2 g) Dried oregano or thyme
- 1 lemon, thinly sliced into rounds
- 2 tbsp (8 g) Fresh parsley, chopped
- 1 tbsp (15 ml) Extra virgin olive oil
Instructions:
- Preheat your oven to 400°F (205°C).
- In a small bowl, whisk together the melted butter, lemon juice, zest, minced garlic, and dried herbs.
- Tear four 12-inch squares of heavy-duty foil and drizzle each center with a small amount of olive oil to prevent sticking.
- Place one cod fillet in the center of each foil square and season generously with salt and pepper.
- Spoon the butter mixture over the fish, then top with two lemon slices and a sprinkle of fresh parsley.
- Bring the sides of the foil together and twist the ends tightly to create a sealed pouch, leaving about an inch of headspace for steam to circulate.
- Place packets on a baking sheet and bake for 15–20 minutes until the thickest part of the fillet reaches 145°F (63°C) and flakes easily with a fork.
