Ingredients:
- 3 medium apples, peeled and finely diced (approx. 1.5 lbs / 680g)
- 2 tbsp (28g) unsalted butter
- 3 tbsp (36g) brown sugar
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 10 sheets (approx. 100g) rice paper wrappers
- 2 tbsp (30ml) neutral oil
- 1 tbsp (8g) granulated sugar
- ½ tsp (1g) ground cinnamon
- ¼ cup (60ml) maple syrup
- 1 tbsp (15g) salted butter
Instructions:
- Sauté the diced apples in butter over medium heat. Stir in brown sugar, cinnamon, and lemon juice. Cook for 5–7 minutes until the apples are tender and the liquid has reduced to a thick, sticky glaze. Let it cool for 5 minutes.
- Dip one rice paper sheet into warm water for 5 seconds until pliable. Lay it flat. Place 2 tbsp (30g) of filling near the bottom edge. Fold the bottom over the filling, tuck in the sides tightly, and roll upward into a cylinder.
- Lightly brush the exterior of each roll with neutral oil. Dust with the cinnamon-sugar mixture.
- Place in a single layer in the air fryer basket at 390°F (200°C) for 6–8 minutes, or in a 400°F (205°C) oven for 10–12 minutes, until the wrappers are mahogany-colored and sound hollow when tapped.
